Introducing our new video series: Top 5 Uses for Kitchen Scissors
Happy New Year, friends! Today we’re starting a new video series featuring our Top 5 Uses for Kitchen Scissors. We begin with Number 5: How to Spatchcock a Chicken, featuring our lovely and extremely popular Italiano Classico 8” Kitchen Scissors with detachable blades (great for cleaning in the hinge!)
We also thought it would be super fun to accompany these videos with our favourite recipes. In this case, one of my absolute stalwarts is Yemeni Spice-Rubbed Chicken, a recipe I originally found in Faye Levy's wonderful cookbook Feast From the Mideast which, 20 years later, is still in our top five most used cookbooks. (If, like us, you're fans of Rancho Gordo beans, you'll be delighted to know there are also loads of great bean recipes!) Please note: this chicken dish *must* be served with Faye’s Garlic Sauce...
Grilled Whole Chicken with Yemeni Spice Rub
1 tbsp olive oil
1 1/2 tsp ground cumin
1/2 tsp turmeric*
1/2 tsp freshly ground black pepper
1 tsp ground coriander
1/4 tsp cinnamon
1/2 tsp salt
Combine spices. Wash & pat dry a whole chicken (3-4 lbs). Using gloves, rub oil & then spice mixture all over the chicken, inside & out. Grill!
You’ll probably have some rub left over - I usually make a double batch to have some on hand. Doing two or more whole chickens on the rotisserie grill in this manner is a simple & delicious way to feed a crowd!
